Cat’s Eye Distillery is a small family owned micro-distillery whose mission is to create truly EPIC tasting products. John Baker, one of the owners, previously worked at Honey Creek Distillery in Van Buren County where we gained his initial experience distilling products. Since then he has done considerable research and met with owners of 22 different micro-distilleries in Colorado to see what works and what does not work. After much experimenting they released their first whiskey product, “Essence of Iowa” followed by “Krupnik”, “Juniper Delight”, and “Some Like it Hot” which is a jalapeno based spirit.

When deciding on a name for the distillery Johns wife Linda said to be true to his heart and name it after something that he truly liked to do. John is a member of the Quad Cities Astronomical Society and one of John’s favorite hobbies is astrophotography so he decided to name it after one of the Hubble space telescopes greatest pictures of deep sky object NGC-6543, better known as the Cat’s Eye Nebula. Linda liked the name but said that not too many people would understand the logo so they took a picture of their daughters cat, Maui, and “Wah-Lah!”, the perfect logo!

Our Process

Grains are either malted and dried or just dried out immediately. Dried grains are milled and ground with excess debris removed. Water is added to the grain to create a mash and cooked allowing starches to convert into sugars. The new resulting liquid is called wort.

The wort is pumped into a fermenter with yeast. The yeast converts the sugars into varying alcohols. This new liquid is called a distillers beer. The beer is put into a sill where alcohols are vaporized and separated from water. This process is repeated to increase alcohol purity.

This alcohol or ‘new make spirit’ is put into oak containers and aged for many years. Some barrels are new, some are charred. When they whisk(e)y has been aged a sufficent amount of time, it’s mixed with other barrels of varying ages to create the final product.

Depending on what ABV the distiller wants to bottle at, water is added to dilute the whiskey (but sometimes no water is added) this is called single barrel, Bottled + it’s ready for you to drink.

Our Spirits

At Cat’s Eye Distillery our mission was to learn and understand the scientific processes which go into creating a hand crafted whiskey from corn that would be perfect for both beginners and refined whiskey drinkers. We met this challenge and our first whiskey product is called ‘Essence of Iowa’.  We take and age only the premium cuts from the hearts of the distillation run in charred oak barrels. Customers who typically do not like whiskey and try it are usually amazed at how smooth it is with no after bite associated with some other whiskies.

Gin (originally called jenever) origin goes back as far as the 1500’s by the Dutch for medicinal purposes.  By 1606 the Dutch had levied taxes on jenever and similar liquors as alcoholic drinks, suggesting that jenever had by then stopped being considered a medicinal remedy.  Genever was originally produced by distilling malt wine.  Because the resulting spirit was not palatable due to lack of refined distilling techniques, herbs were added to mask the flavor.  The juniper berry, jeneverbes in Dutch, hence the name jenever (and the English name gin), was used for its alleged medicinal benefits. Cat’s Eye Distillery researched and experimented with a wide variety of herbs and spices to come up with the perfect jenever style distilled spirit.

We also wanted to create some unique products that would capture the spirit of creativity and meet our goal of making truly EPIC tasting products. KRUPNIK is a honey based product that customers have said taste like “Christmas in your mouth”. In addition it the same premium cuts that we use in our “Essence of Iowa” whiskey, we add honey, orange and lemon zest, and a variety of spices like cinnamon, cloves, nutmeg, peppercorns, … Krupnik can be drank straight up or added as an ingredient to other holiday toddies.

Master Collection Series

The OBTAINIUM Master Collection Series are premium whiskey products barrel sourced from around the globe.  There are currently 2 products available.  a 13 year old Light Whiskey bottled at barrel strength (around 140 proof) and a 6 year Tennessee Rye Whiskey also bottled barrel strength at 115.5 proof.

BARREL SOURCING PROGRAM

The program will offer customers the opportunity to create their own custom whiskey selections.
This project is a joint venture between John Baker, IT professional and owner of Cat’s Eye Distillery in Bettendorf, Iowa, and Eugene Nassif, an attorney in Des Moines, Iowa and 
whiskey  enthusiast. These individuals met through a local whiskey enthusiast group. Ever since 
meeting, they have bounced ideas off each other for ways they could make an impact on Iowa’s 
whiskey industry.
 The result is an experience like no other, brought to you by Cat’s Eye Distillery. 
Customers will be able to pick from various whiskies from around the US, Ireland, and Scotland.
After a barrel is selected, Cat’s Eye will bottle the whiskey, and fit it with a custom label of the 
customer’s choosing. Finally, the finished bottles will be sold through a partner retailer, to 
comply with state regulations.

The list is quickly changing with new whiskies. If you don’t see a product you like, Cat’s Eye 
Distillery will do their best to source a product to fit your needs. Finishing of a whiskey is also 
available in various wine, rum, new/used oak and brandy casks.
These barrel selections will yield anywhere between 75 and 300 custom bottles of 
whiskey from a 53 gallon barrel and 1400+ for a 1000 liter tote. Pricing varies greatly by 
whiskey selected, proof chosen, and packaging, but expect custom bottles to be priced 
competitively to on the shelf products of the same vintage, location, and proof. These bottles are 
perfect for restaurants, local retailers, corporate and family gifts, weddings, and charity/business 
events.
